Dill-icious Nut & Dairy Free Pesto

Add a bright pop of flavour to your favourite veggie side dishes or salads with this twist on traditional pesto.
3 tbsp sunflower seeds, toasted
2 cups fresh dill
3 cloves garlic
Juice of 1 lemon
½ tsp lemon zest
¼ cup extra virgin olive oil
½ tsp sea salt
Combine sunflower seeds and garlic in a food processor and pulse to chop garlic. Add remaining ingredients and process until you have grainy consistency.
Try adding a tablespoon or two to your favourite hummus recipe.
Smother over grilled or baked fish or tofu for a bright pop of flavour.
Combine 1 tbsp pesto with 1/4 cup olive oil and 1/4 cup apple cider vinegar for a flavour-filled twist on a traditional vinaigrette.
Or try tossing with warm roasted veggies or potatoes for an irresistible side dish.
